Avocado Lime Shrimp Salad

🥑🍤Avocado Lime Shrimp Salad🥗🍅
The perfect lite, refreshing summer dish!
Ingredients:

  • 14 ounces jumbo cooked shrimp, peeled and de-veined, chopped.
  • 1 1/2 cup (9.51 oz) tomato, diced
  • 4 1/2 ounces avocado, diced
  • 1/4 cup (.80 oz) jalapeno, seeds removed, diced fine
  • 1/4 cup (.88 oz) chopped green onion
  • 2 tablespoons lime juice
  • 1 tsp olive oil
  • 1/4 cup chopped cilantro
  • 1/8 teaspoon salt
  • 1 tbsp + 2 tsp chopped red onion
  • ¼ teaspoon fresh pepper to taste

Directions: In a small bowl combine green onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.

In a large bowl combine chopped shrimp, avocado, tomato, jalapeno. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.

Makes 2 servings

Remember Red Poppies

Memorial Day poppies usually appear every year and raise funds for a great cause, but over the last couple years I see less and less of them. Then what really breaks my heart is that most people don’t even understand their significance for Memorial Day. It’s a rich part of not only American history but world history.

So here is the history behind these beautiful red flowers…
The red poppy, or Remembrance Poppy, has been a symbol of lives lost to war since World War I (1914–1918), and it plays a big part in the history of Memorial Day. The poppy is worn in many of the countries that were Allied during World War I, including Great Britain, France, Belgium, Australia, New Zealand, Canada, and the United States. In most of those other countries, the poppy is worn on and leading up to Armistice Day (also known as Remembrance Day) on November 11, which is Veterans Day in the United States, or on ANZAC Day (April 25) in New Zealand and Australia, which commemorates the Australian and New Zealand Army Corps troops who served in the 1915 Gallipoli Campaign. But in the United States, the poppy is worn on Memorial Day.

The poppy as a symbol of war casualties started with a poem. In the spring of 1915, a Canadian artillery unit brigade surgeon named Lieutenant Colonel John McCrae saw bright red poppies blooming on the war-torn fields where so many soldiers had lost their lives, and he was moved to write “In Flanders Fields.”

The poem begins, “In Flanders fields the poppies blow / Between the crosses, row on row,” and ends, “If ye break faith with us who die / We shall not sleep, though poppies grow / In Flanders fields.” The poem was published in a London magazine and later syndicated to publications in other Allied countries, where it was seen by two separate (but important) women.

Two women in different countries saw the poem and were inspired in different ways. American University of Georgia professor Moïna Michael wrote a poem in response to McCrae’s, titled “We Shall Keep Faith,” in 1918. She also started wearing a red poppy in honor of the troops and came up with the idea of making and selling red poppies to raise money for veterans.

Meanwhile, in France, Anna Guérin organized large poppy drives, making and selling poppies to raise money for widows, orphans, and veterans, and to fund France’s post-war restoration efforts. She championed her idea for an “Inter-Allied Poppy Day” and started Poppy Days worldwide, during which fundraising poppies were sold in many Allied countries. Poppy factories were set up, often employing disabled servicemen to make the silk and paper blooms.

To this day many Americans will pin a bright red poppy to their shirts as a sign of respect. In the United States, the poppy is traditionally worn on the last Monday in May, Memorial Day, to commemorate the lives of those who died fighting for our country. The Friday before Memorial Day is National Poppy Day. You can find poppies that are handmade by veterans as part of their therapeutic rehabilitation and distributed across the country by the American Legion Auxiliary in exchange for donations that assist disabled and hospitalized veterans. Be sure to also check with your local Veterans programs to see if they are offering poppy pins to support your local veterans.

We used the second activity from the poppy flower project and used big black pom poms for my stigma, instead of drawing them on. We double plated our poppies to make them fuller. Make sure to soften and work the paper petals and bend them the way you want them. Then we made big green leaves from card stock and added details using watercolor pens.

Refreshing Summer Drink Ideas

Summer is here! Well in Central California at least! Here’s a healthy & tasty way to keep cool!

Cucumbers are very refreshing and hydrating. While they are composed mostly of water, the skin is rich in fiber and contains silica, potassium, and magnesium. A lot of people don’t like the skins of cucumbers, but they are worth eating so you can get those minerals. Make sure you use organic cucumbers if you’re going to eat the skin.

Coconut water is very hydrating and is full of natural electrolytes.

Parsley is full of nutrition with a large amount of available vitamin K, C, and A, along with anti-oxidants that help cleanse the blood. Parsley is also a great source of folic acid, which is one of the most important B vitamins. To green smoothies and beverages, parsley adds a mild “green” flavor that is light and refreshing. Because of the high nutritional value of parsley, I’ve started keeping it on hand regularly and I use it in just about everything.

You could add a variety of ingredients to this recipe. Watermelon would be divine. Honeydew would also be a delicious flavor to compliment the cucumber and citrus.

Ingredients

• 2 cups coconut water

• 1 small cucumber, washed and thinly sliced or chopped

• ½ cup fresh lemon juice

• 1 large bunch parsley, chopped fine

• 1 tsp. fresh, grated ginger

• ½ tsp raw honey

• ice

Instructions

There are two ways you can make this – it’s delicious either way:

1. Chop the cucumber and parsley and add to a quart jar. Add the honey, coconut water, lemon juice, and ice. With a tight fitting lid, shake vigorously until combined. Serve immediately. When you get done with the beverage, you’ll have a fresh little salad in the bottom of your glass. Some people might think this is weird – I thought it was tasty.

2. In a blender, add all the ingredients, except the ice and pulse to combine. Pour over ice and serve. If you want it more like a slushee texture, add some ice and blend to desired consistency.

Shrimp Ceviche Stuffed Avocados

Ingredients:
✅ 3 large ripe avocados
✅ 1 lime wedge
✅ 1 pound fresh raw shrimp chopped
✅ 1 red Fresno chili, minced
✅ ½ cup finely diced white onion
✅ 2 tbsp. fresh cilantro, minced
✅ 2 tbsp. fresh lime juice
✅ ½ cup orange juice
✅ 2 tbsp. vegetable oil
✅ kosher salt to taste

Instructions:
Cut avocados in half. Remove skin and pits. Sprinkle with lime juice and kosher salt.
In medium bowl add chopped raw shrimp, chili, onion and cilantro. Mix well and then add lime juice. Stir and let sit for 10 mins.
Add orange juice and vegetable oil and stir well. Season to taste with kosher salt.
Spoon the Ceviche into each avocado and serve chilled.

Oh, No! Schools Out…oops I mean…Yay?

 If you have school aged kids you are probably feeling similar to what our photo is expressing AND yes we do have the days counted till school begins again. For us it’s 82 days till our three are back in school. Last year our summer was rather unpleasant… You know filled with bickering siblings, crying, whining…the constant use of the phrase “I’m bored”. That went on for about half of summer vacation till we put our foot down and said “No More”. They wanted to do sports, camps, swimming lessons, parties, & more… That’s great but those things cost money and x3 it adds up fast. So we set the rule if you want it you have to pay for it yourself. Our kids whined for a few minutes, but then quickly got to brainstorming on ways to earn money. Here’s what they came up with:

  1. Lemonade Stand
  2. Collect Recycling from friends, neighbors, & family to cash in
  3. Sell fruit from our tress in our yard

We were impressed that (at the time our 3, 4, 7 year old) kids came up with these on their own. Next we sat down as a family and priced out all the activities each of them wanted to do. After everyone had their totals they made little goal posters so they could keep track of their earnings visually. Next we gathered supplies we would need for each money making activity…table, cups, lemonade, wagons, baskets, etc. We set a day and time for our Lemonade Stand and passed out flyers, plus posted it on social media. We really didn’t expect the Lemonade Stand to make big bucks, but the kids raised over half their goal. We were really amazed how hard they worked and actually worked together. Each kid had a job; our youngest scooped ice, middle took money, oldest poured and handed lemonades out.

A couple days later we got our wagon and walked with the kids door to door collecting recycling from neighbors. Also had a drop off day for our friends and family to bring by their recycling donations. Cars would pull up, kids would go out with their wagon and bring them up the driveway to sort into our collection cans.  The next day we took our whole collection down to the recycling center. Each kid made about $10.00, not too bad for a days work.

For our fruit sale we posted online to our friends and family to pre-order how many plums they’d like to buy. We then had the kids bag up the right amount of fruit and write the family’s name and the cost on the bag (ex: Smith – $5.00). We set a pick up time and they would drive up, kids go out with bags and came back with money. The kids got a lot of tips for their road side service.

After completing all 3 “jobs” they each had enough money to do their activities. Next we helped them sign up for their activities and they proudly paid for it with their own money.

The structure of problem solving helped get our summer going in the right direction. The kids were involved in so many things of their own choosing they were mostly too tired to bother fighting with each other, which made our summer much more peaceful.

This summer we decided to do a repeat of last year and let the kids come up with money making ideas and go to work earning their activity fees. This summer our activity goals consist of cheerleading, swim lessons, fitness fun camp, and basketball camp.  So here’s to screamin` & shoutin` for all the right reasons this summer!

Spectacular Weekend

We just spent a great weekend with our fam/BFFs! We were having fun all over the Los Angeles area.

We were near an IKEA so of course we had to go check it out. IKEA has all these different show rooms set up like a movie set. We went from set to set posing and taking pictures. I always say IKEA is like a pretend palace for grown-ups.

After exploring all of the wonderful things IKEA had to offer we went back to our hotel and just hung out watched TV grabbed some dinner.

Sunday we decided to hit the beach. It was a beautiful day. Perfect weather. Not too cold and not too hot.

Chelsea enjoyed the fantastic warm sun.

The guys went skim boarding. Chelsea attempted to skim board. We took a few videos, we’ll post those later. After a couple hours of fun in the sun we decided it was a good time to go get some water front sea food. We had a fantastic lunch at Gladstones in Malibu. Food was a bit pricey but worth it.
We would have stayed longer but we had to get back home… 🙁 We were having so much fun together it was sad to leave. Hopefully we’ll get together again some time soon.
